YUMYUM




Well, this came out perfect. 140 F internal temp, juicy, and extremely tender! Looking forward to doing this again.

Got the meat going at 6AM as promised. The meat is getting beautiful! Will come out for slicing by about 4-5 this evening and will be tender to the point of flaking, yet moist and flavorful.
